...sort of. It's sort of possible.
So let me set the scene for you. B went out with the guys on Friday and I stayed home to watch the Olympic opening ceremonies. Of course, I always get the hankering to bake something when I'm home alone on a weekend, but I really don't NEED any baked goods around the house. Then I remembered my coworker telling me about a chocolate cake recipe that replaced the oil with pureed pumpkin. So I looked up a couple recipes for "healthy brownies". One that stuck out to me was one by Jessica Seinfeld from MedicineNet.com which used pureed carrot and spinach. Yes. Carrots and spinach. These brownies are very moist and almost fudge-like. If you like cake-like brownies, these probably aren't for you.
I altered the recipe just a bit to replace the sugar and margarine (and added chocolate chips), but they still turned out just fine.
Healthy Double Chocolate Brownies
Ingredients
3/4 cup whole wheat flour
1/3 cup + 1 tbsp Stevia
1/4 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp salt
4 oz semisweet or bittersweet chocolate
1/2 cup carrot puree
1/2 cup spinach puree
2 tsp vanilla extract
2 tsp molasses
1/2 tbsp coconut oil (replace with extra greek yogurt if you don't have on hand)
2 tbsp greek yogurt
1 egg (or 2 egg whites)
1/2 cup chocolate chips (I used dark chocolate)
Directions
1. Preheat oven to 350 degrees.
2. To puree vegetables, steam in the microwave (carrots for 7 minutes, spinach for 1 minute) until soft. Place in a food processor and puree until smooth.
3. In a separate bowl, combine the first 5 ingredients.
4. Melt the chocolate in a double boiler until just melted (the bigger pieces will keep melting after being removed from the heat)
5. In a large bowl, or the bowl of a stand mixer, combine the melted chocolate, pureed carrot, pureed spinach, vanilla, molasses, coconut oil, and greek yogurt. Beat until completely incorporated.
6. Whisk in eggs.
7. Pour in all dry ingredients and mix on slow until fully incorporated.
8. Using a wooden spoon or spatula, stir in chocolate chips.
9. Pour batter into a lightly greased 8"x8" pan and bake for 30-35 minutes or until a toothpick comes out clean. Will make 16 brownies.
Ok...now...let me honest here. Do these brownies taste like they have carrots in them? No, not all all. But do they taste like gourmet, full sugar, full fat brownies. Of course not! They have carrots and spinach in them! They will certainly satisfy your sweet tooth or chocolate craving. And if you happen to eat a few too many, you don't have to feel guilty because you probably just had an extra serving of vegetables.
