"It's Okay" Thursday

This week is flying by, I can't believe it's Thursday already.
It's Okay...

...that I have been a bad blogger because I have been so busy furniture shopping online.
...that I think it might be worth it to hire a decorator (even though I can't afford it) because decorating is stressful!
...that I will probably just find a picture of a living room on Pinterest and copy everything in it.
...that I just caught up on Downton Abbey. I definitely cried watching the last episode.
...to be sad 30 Rock is ending, but to not really notice thanks to syndication.
...to work from home and go days without putting on makeup and normal clothes.
...to have promised yourself you wouldn't work from home and go days without putting on makeup and normal clothes.
...to have broken that promise to yourself.
...to be 27 and still want to send Valentine's to your friends.
...that I care less about watching the Super Bowl.

Roasted Garlic & Rosemary Twice Baked Potatoes

 I made these twice baked potatoes as one of our last home-cooked meals before we left for North Carolina. B and I just fell in love with them. He loves baked potatoes (especially the twice baked variety) and I love anything with garlic and rosemary.

The only problem is that twice baked potatoes are a pretty big investment in time. You have to bake the potatoes, let them cool, take out and make the filling, re-stuff them, and bake them again. You get the idea.
First, the potatoes need to get baked. I guess you could microwave them to save some time, but you really want that crispy potato skin that comes with baking. I like to rub the cleaned potatoes down in some olive oil and then bake them straight on the oven rack
Meanwhile, I peeled 3-4 cloves of garlic, and set them on a piece of aluminum foil. I drizzled with a small amount of olive oil, sprinkle with salt, and wrapped up the foil.
I placed the garlic in the oven with the potatoes, and roasted them for about 30 minutes, or until the were golden brown and soft.
After about an hour minutes, the potatoes were done baking, and I let them cool until they are cool enough to handle, which was about 20 minutes. Then I cut the potatoes, lengthwise, about 1/4 from the "top" so that 3/4 of the potato remains to be re-stuffed.
 I then spooned out most of the inside, including from the "top" that I just cut off, and tossed everything in the bowl of my stand mixer.

I left a little bit of the flesh in the potato so that they held their shape and didn't break apart.
To that, I added the butter, Greek Yogurt (our sour cream, if you prefer), salt, pepper, rosemary, garlic, and Parmesan.
And then let the stand mixer to the work and whip it all together. I like to leave some chunks in there. What can I say, I'm a chunky mashed potatoes kind of girl.
Once everything is mashed together, I just spoon the potato back into the potato skins. If you want, you can add some extra cheese to the top to make them extra delicious. Or you can leave them plain, like I did. I promise, they are still wonderful without the extra cheese.
THEN, the stuffed little potatoes go back in the oven for another 15 minutes, or until they are nice and roasted. I like to also blast them with the broiler for a few minutes to finish them off and give them that nice golden brown top.

By the way...these smell delicious when they are baking. You will want to dig right in!

Roasted Garlic and Rosemary Twice Baked Potatoes
Ingredients
2 large russet potatoes
2 tsp olive oil, divided
2 tsp salt, divided
4 cloves garlic
1 tbsp Greek yogurt
1 tsp butter
2 tsp milk
1 tbsp rosemary, chopped
1 tbsp Parmesan cheese grated

Directions
1) Wash and dry potatoes. Pierce holes into the skin of the potato with a fork. Rub the skin of the potato with 1 teaspoon of olive oil.
2) Bake the potatoes in a 400 degree oven for 1 hour and 15 minutes.
3) Place garlic cloves in a piece of aluminum foil and pour over the other teaspoon of olive oil and sprinkle with salt. Wrap up foil and bake in the oven with the potatoes for 30 minutes.
4) Remove potatoes from oven and let cool. Cut off top, and remove flesh with a spoon and put in the bowl of a stand mixer.
5) Add salt, yogurt, butter, milk, rosemary, salt and Parmesan cheese to potatoes, and mix together.
6) Spoon the potato mixture back into the potato skin and bake in a 350 degree oven for 15 minutes.

SAG Best & Worst Dressed

Who else watched the SAG Awards last night? I love award show season just so I can see all the pretty dresses. I could care less about who wins. Typically, the movies/shows/actors/etc. that win I have never seen or heard of before. So, I just watch for the dresses.

What can I say, I'm a girl!

And just so everyone knows, I am aware that I have no right to judge these woman. They are all beautiful and talented, so take my judgment with a grain of salt.

Extreme Midget Wrestling

This weekend was not long enough. As usual.

 1. I started off the weekend (Friday) by baking some homemade bread! My very first bread making attempt was successful.
2. The weather was finally clear enough so we could see Downtown from our rooftop.
3. I tried to pull of plaid and polka dots. I think I did okay.
4. B and I explored more of our neighborhood.
5. We figured out what we will be doing on February 23rd. Obviously.
6. I found a cute little shop full of fun things. I think I may attempt to make coffee mugs like this as Valentines Day gifts.
7. B and I went furniture shopping...
8. Then we bought wine. Boxed wine no less.

Some other things I did the weekend, not pictured:
- Bought some new boots at DSW on super clearance.
- Survived the "ice storm" and took the light rail into Downtown to see Zero Dark 30. Excellent movie.
- Tried 2 new great restaurants thanks to Charlotte Restaurant Week.
- Discovered some new antique stores around town.
- Watched the SAG awards, and put together some of my best and worst dressed, posting later.

"It's Okay" Thursday

It's okay...

...that I just watched an entire E! True Hollywood Story on the Kardashian Family. Why?
 ...to think that Bruce Jenner talks exactly like your future father-in-law.
...to keep a "blog journal" to write down any ideas or recipes I have. I'm such a nerd.
...that I want to redesign my blog...again!
...to only want to go into the office just so I have people to bake for.
...to work from home because you don't want to go out in the freezing (literally) cold.
...that I probably won't get out of my PJs today - see above.
...to, nevertheless, be disappointed there hasn't been any snow!
...to put enough sugar and milk in your coffee that it barely tastes like coffee anymore.
...to still not be caught up on Downton Abbey Season 3.
...to want to go to Target just to get my ShopKick points. I want that Kate Spade gift card!!

...that I am sick of hearing about how Beyonce "lip synced" at the inauguration. She still sings better than you!

OHP - Valentines Day

I feel like I haven't done an OHP post in a while. I blame the holidays. And the move. And life. It all gets in the way.

If you read yesterday's post, you probably guessed I am already in the Valentine's Day spirit. Not that I am particularly fond of Valentine's Day. I think its a waste of a holiday. But any excuse to bake and craft...am I right!?

Valentine's Day Pound Cake

A while ago, sometime after Thanksgiving, I pinned this pound cake that had a pumpkin shape baked in the middle. When I pinned it I thought, "you could put any shape inside".

With Valentine's Day coming up, I thought baking a heart shaped pound cake would be perfect.

First, I made the batter for the colored shape that is going to go in the middle of the final cake, poured into a prepared loaf pan, and baked until almost done. I wanted the cake to be a little under done so that when I baked it again, it wasn't overdone.

In the meantime, I made the batter for the rest of the cake, which is exactly like the batter for the first loaf, except without food coloring. Then I set the batter aside. After I let the already baked loaf cool for 20 minutes, I sliced it into 10 even slices.
From those slices I cut out small heart shapes.

I set the cut out hearts back into another prepared loaf pan so that they all lined up.

Making sure none of the hearts shifted, I gently poured the uncolored batter over, using a spatula to spread out evenly.

I baked the loaf at 350 degrees for 50-60 minutes until a toothpick came out completely clean. I then let it it sit for about 5 minutes before removing the loaf from the pan and setting it on a wire rack to finish cooling.One it cooled, I sliced up the loaf into 10 slices, about the same thickness as the hearts. Once sliced, I could admire my handy work!

I decided to make a pound cake from scratch, but you can do this with a store bought pound cake mix as well. I also think a strawberry cake would be nice as the inner layer.

Valentines Day Pound Cake
Ingredients (note: Make 2 separate batches of batter, one with food coloring, one without)
1/2 cup butter, room temperature (x 2)
1/2 cup non-fat Greek yogurt (x 2)
1 cup sugar (x 2)
4 eggs (x 2)
1/2 tsp salt (x 2)
2 tsp vanilla extract (x 2)
1/4 tsp pink gel food coloring (only for inner shape)
2 cups all purpose flour (x 2)

Directions
1. In the bowl of a stand mixer, mix the butter, Greek yogurt, and sugar until light and fluffy.
2. Add the eggs, one at a time, mixing each one before adding the next.
3. Add vanilla, food coloring salt, and mix in until just combined.
4. 1/2 cup at a time, add the flour to the butter mixture, mixing in between each 1/2 cup. Once all flour is added, mix just until all flour is combined.
5. In to a greased and floured loaf pan, pour the cake batter.
6. Bake at 350 degrees for about 40-45 minutes. You want the cake to be just underdone, but not still wet inside.
7. Once the cake is done baking, remove it from the pan and place on a cooling rack. Allow to cool for 15-20 minutes.
8. In the mean time, repeat the first 4 steps and make a second batch of uncolored cake batter. Set aside
9. Take the cooled loaf and cut into 8 to 10 slices.
10. From each slice, use a cookie cutter to cut out the shape of your choice. Place the cut out slices back into a new greased and floured loaf pan. Line up each slice so they form one continuous shape.
11. Making sure she shapes stay in place, pour the uncolored batter over the shape. Even out the top of the batter with a spatula.
12. Bake second loaf at 350 for 50-60 minutes, or until a toothpick comes out clean. Remove from pan and set on cooling rack. Allow to cool for 15 minutes.
13. Slice into 8-10 slices and serve, or wrap in plastic wrap and store until ready to serve.

New City. New Friends.

This weekend was spent exploring our new neighborhood and finally feeling at home in our new apartment.

Saturday, B and I walked down the street to the Atherton Market, which is kind of like a mini farmer's market. I think B and I will make this a weekly event.

On our walk back I spotted a spice shop, and of course I had to go in. They had just about every spice and every variety those spices available. I picked up some Mexican vanilla and some hazelnut extract. You know I will be using that to make some Neutella-inspired treats!

Saturday night we went on a "date" with some new friends! One of the girls in my old book club back in Dallas introduced us over email, so we set up a dinner for Charlotte restaurant week. The food was great and so was the company!


Sunday was errand day. And boy did we have a ton of errands. We are still trying to get things organized in the apartment, so we had a few stops to make. It was on this trip that I discovered the most amazing app ever, ShopKick, which I wrote about yesterday.
I came home and finally got to do some baking!! I attempted my very first homemade marshmallow! I also made some Valentines Day pound cake.
 
Since we picked up a fresh loaf of bread at the Atherton Market, I attempted to recreate one of my favorite sandwiches . The Turkey Club sandwich is actually not that complicated. We will definitely be putting this in the rotation.
Gosh, now that I write it all down, we were pretty busy this weekend. Maybe next weekend we will get to relax a little more.

Need More Reason to go Shopping?

B and I spent a lot of time shopping at Target this past week. It was while at Target on Sunday that I discovered something amazing.

While browsing the Target app on my phone for coupons and sales and such, I got distracted by a little promo that said I could get a $2.00 gift card by just downloading some "ShopKick" app. "Sure! For a free $2.00, I'll download whatever free app you want me to, Target!" I said...probably out loud.

Once it downloaded, it took me about 5 seconds to get sucked in!

I am not 100% familiar with all of the rules and what not, so don't get mad at me if I misstate something. But, in essence, you get rewarded for going to some of your favorite stores. For instance, I want to get a Target gift card (this is not the $2.00 gift card. I got that just for downloading the app), which is 500 kicks. Then, just by walking into stores in the area (Target, West Elm, Staples, Best Buy for me), I racked up 300 kicks! I am almost to a Target Gift Card!

B was so annoyed. We didn't need to go to any of those stores, except Target of course. But I wanted to rack up my "kicks"! I could have gotten even more "kicks" if I had scanned some items in the store, which I assume will be used to compare prices of items across multiple stores. B would have killed me if I had done that.
