Good thing about low expectations is that they can be easily exceeded. This weekend actually turned out to be pretty fun and very productive.
First, I was very proud of myself for starting a new workout program this weekend which I have had very little motivation to start. You may have seen the info-mercials for Tapout XT on TV before. It claims to be hardest workout on the market. It's no walk in the park, but it's definitely not impossible...and even kind of fun. If you aren't familiar, think mixed martial arts meets P90X. Needless to say, I am sufficiently sore today.
Second, B and I decided to shake things up a bit and hit up Dave and Busters Saturday night. He had a gift card that he had gotten for Christmas, so it ended up being a pretty cheap date. Plus, I impressed him by walking up to the first game I saw and winning 400 tickets. I am sure I will never be able to do that again, but I felt pretty cool.

Sunday afternoon after I got back from the office and my trip to the grocery store, I decided to test my amature culinary skills by making homemade ricotta cheese. Have you ever have fresh, homemade ricotta? It's wonderful. It will inspire you to attempt to make your own ricotta, too.
I have tried to make ricotta before and it didn't work out too well. This time around, I felt much more confident about it. You might even say I had high expectations (you can see where this is going). I decided to do a little more research and found a fool proof recipe. Seemed easy enough.

Essentially, the moral of the story is: sometimes it's okay to have low expectations. You might even be pleasantly surprised.
Hope everyone had a great weekend!

Haha I totally remember that skit! And at least you tried to make the ricotta - more that most people do :)
